Bloody Mary Marinated Jackfruit Sandwich

This Bloody Mary marinated jackfruit sandwich is the ultimate meat-free, plant based treat. It's easy to make the jackfruit ahead, plus it has a wonderfully meaty texture and is loaded with Bloody Mary flavors. Tangy, fresh, dilly, spicy, and salty. A true savory delight.

If you've never cooked with or tasted jackfruit before, it's a weird looking fruit that commonly grows in Africa, Asia, and South America. When you pull apart jackfruit, it takes on the texture of shredded meat. As a result, jackfruit has become a staple for vegans and vegetarians. You can now find it in the canned section at most grocery stores, just make sure you find the kind without sugar, as it is sometimes used for desserts. Canned jackfruit is unripe, so it doesn't have a distinct taste. It is the perfect meat substitute that you can dress up with any flavors you like.

Ingredients:

Jackfruit

Celery Slaw

  • 1 stick celery
  • 1/2 cup shredded carrots
  • Half of medium red onion
  • 1/4 cup mayo
  • 1 tsp apple cider vinegar
  • 1 tsp sugar
  • Salt
  • Pepper

Jackfruit Sandwich

  • Burger buns, slider buns, or bread of choice
  • Desired fixings: mashed avocado, tomatoes, sliced pickle spears, hot peppers, etc.

Directions:

Jackfruit

  1. Marinate jackfruit in Bloody Mary Mix for 1 hour, up to 3 hours.
  2. Add avocado oil to a skillet on medium-high heat.
  3. Pan fry jackfruit until softened and crispy.
  4. Pull apart the jackfruit so it takes on a shredded texture.
  5. Add salt and pepper to taste.

Celery Slaw

  1. Julianne celery (lengthwise), carrots, and red onion into half-inch pieces.
  2. Add vegetables to a mixing bowl and toss with mayo, apple cider vinegar, and sugar.
  3. Add salt and pepper to taste.

Jackfruit Sandwich

  1. Toast a burger bun or bread of your choice.
  2. Add mashed avocado to each side of the bun.
  3. Layer bun with tomatoes, celery slaw, sliced pickle spears (we used Habanero Horseradish Dills), and Bloody Mary marinated jackfruit.
  4. Serve with Bloody Mary Spiced Fries.
