Bloody Mary Shrimp with Creamy Polenta

A comforting and cozy meal of refreshing Bloody Mary shrimp and rich, creamy parmesan polenta. It comes together in a few easy steps, making it a great weekday dinner.

Bloody Mary Shrimp Ingredients:

  • 1 lb. shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup The Real Dill Original Bloody Mary Mix
  • Fresh herbs such as thyme, parsley, and chives, chopped

Creamy Parmesan Polenta Ingredients:

  • 1 cup polenta
  • 3 cups chicken or vegetable broth
  • 1/2 - 1 cup milk (depending on desired creaminess)
  • 1/4 cup grated parmesan cheese
  • 2 tbsp unsalted butter
  • Salt and pepper to taste

Directions:

  1. In a bowl, combine shrimp with minced garlic and Bloody Mary Mix. Marinate for 30 minutes, up to overnight. The longer the shrimp marinate, the better the flavor.
  2. Once the shrimp is done marinating, heat a cast iron skillet over medium high heat. Add olive oil to the pan.
  3. Add marinated shrimp and cook for 2-3 minutes on each side, until they turn pink and opaque.
  4. Remove shrimp from the skillet and set aside.
  5. In a saucepan, add broth and milk and bring to a gentle boil. Gradually whisk in the polenta, stirring constantly to avoid lumps. Reduce heat to low and simmer, stirring often, until the polenta thickens. Once the polenta is cooked through, about 20 minutes, stir in the grated parmesan cheese and butter. Stir until everything is fully incorporated. Season with salt and pepper to taste.
  6. Serve the creamy parmesan polenta alongside the Bloody Mary shrimp. Top with fresh herbs of choice such as thyme, parsley, and chives.
