A Really Good Pickle Sandwich

We stumbled upon Food52's article: Bless This Pickle Sandwich, a few weeks ago. As author Emma Laperruque puts it, "According to Google, a pickle sandwich means a sandwich on a pickle—like, a pickle instead of bread. This is not that." Instead, this pickle sandwich uses pickles three different ways, a delicious sauce, and sharp white cheddar cheese, all between two slices of bread. We adapted the Food52 recipe to include our traditional Caraway Garlic Dills, but really, any of our pickle flavors will do.

Ingredients:

1 tbsp minced Caraway Garlic Dills
1 tbsp mayonnaise
1 tsp mustard
1/2 tsp Caraway Garlic Dills pickle brine
2 pieces of sandwich bread, toasted (optional)
2 Caraway Garlic Dills spears, sliced
Sharp white cheddar cheese, sliced in triangles

Directions:

In a bowl, combine minced Caraway Garlic Dills, mayonnaise, mustard, and Caraway Garlic Dills pickle brine. Stir to combine.
Spread the sauce evenly onto each piece of bread.
Add cheese slices and pickle slices to each piece of bread.
Slice in half and dig in!
