This bright, refreshing cocktail lives up to the name - tasting subtly like the pickled ginger served with sushi.
1.5 oz Gin (Our Preference: Jackelope Gin from Peach Street Distillers)
.5 oz Fresh Lime Juice
.5 oz The Real Dill Pickle Brine
3 oz Ginger Beer
Shake first three ingredients together with ice. Strain and pour into a highball glass. Add Ginger Beer. Garnish with a lime wheel.
