Bloody Mary Gazpacho

Ingredients:

  • 1 Jar The Real Dill Bloody Mary Mix
  • 1 ½ cups Cucumber, peeled and seeded
  • 1 cup Bell pepper
  • ½ cup Red onion
  • ¼ cup Extra virgin olive oil
  • ¼ Red wine vinegar
  • 1 Large avocado, diced
  • 1 Tbsp Kosher salt

Directions:

  1. Finely chop cucumber, peppers, and onion. Pulsing in a food processor works well. 
  2. Combine all ingredients and refrigerate at least 4 hours, or overnight, to allow flavors to meld. Garnish with fresh dill. 

Yield: 6-8 cups
