Bloody Mary Gazpacho
- 1 Jar The Real Dill Bloody Mary Mix
- 1 ½ cups Cucumber, peeled and seeded
- 1 cup Bell pepper
- ½ cup Red onion
- ¼ cup Extra virgin olive oil
- ¼ Red wine vinegar
- 1 Large avocado, diced
- 1 Tbsp Kosher salt
- Finely chop cucumber, peppers, and onion. Pulsing in a food processor works well.
- Combine all ingredients and refrigerate at least 4 hours, or overnight, to allow flavors to meld. Garnish with fresh dill.
Yield: 6-8 cups
